Another Manic Monday

Hey everyone!

Today is normally Becka's day to post but she's got a sick DH so I'm going to pop in for her. So lets get down to brass tacks shall we?

First off, Becka received her newest cover over the weekend. This is the cover for her next installment of the B*E*A*S*T series. Check it out!



Now what shall we discuss today? Becka said something about doing a recipe so how about we discuss our favorite recipes and then maybe we can collect the actual recipes and send a copy to everyone who is interested?

I'll begin and let me tell you this isn't an easy one for me. I love to eat, I love to cook/bake and I love to eat what I cook/bake LOL

I think I'd have to say my favorite thing is a cake I make called a chocolate covered cherry cake. Moist, rich, cherry topped and filled. This is so rich if you could deposit it you'd never have to work again :)

I love trying to find easy recipes for dessert. I found I was spending way too much money on storebought cookies and pies that I could easily make my own for a fraction of the cost. But sometimes, I don't like to sit in the kitchen waiting on 5 batches of cookies. :P

I like to do breads or cakes, where you mix it, pop it in, and you're done a little while later.

I did some yummy drop cookies yesterday called "Muddy Buddies". DH didn't like them because they were "too sweet", but I love them. Let's see if I can remember off the top of my head...

1/2 cup butter or margarine
4 tbsp. cocoa powder
1/2 cup milk
2 cups sugar
~*~
1 tsp. vanilla
3 cups quick-cooking oats
1/2 cup chunky peanut butter

Combine first four ingredients in a pot. Bring to roiling boil and boil (stirring constantly) for 1 1/2 minutes. Remove from heat.

Pour in last three ingredients and stir until combined. Drop on wax paper and let cool.

Voila! No baking and super-easy. Sure, your face might implode from the sugary goodness, but your kids are sure to love you forever for this simple, quick dessert item from stuff you probably have lying around the house. :)

Becka,

In our house I add all those ingredients minus the peanit butter, and drop them. The DH and kids call them cat poop cookies. They especially love to say this in front of company in hopes that the name of the cookies will be distasteful enough that they get to eat them all.

Texas Sheet Cake
#1
2 cups sugar
2 cups flour
1/2 tsp salt

2 cubes of margarine
1 cup of water

5 Tbsp cocoa
1/2 cup sour cream
2 eggs
1 tsp. baking soda

Bring #2 to boil and add #1. Mix well. Add #3 and mix. Bake in cookie sheet, sheet cake pan or jelly roll pan. Bake at 375 for 20 minutes.
Frosting: Bring to boil 1 cube margarine, 6 Tbsp milk and 5 Tbsp cocoa. Add to 1 tsp. vanilla, 1 cup chopped nuts (almonds) and 1 box powdered sugar (approx 2 cups and then to taste). Spread on warm cake.

I think I just gained 10 lbs reading through these recipes. My favorites are cookie recipes from when my grandmother would bake during Christmas. Date nut cookies come to mind first. Good stuff.

I just made some interesting bar cookies this evening called "blondies." I'll tell you how they are.

Basically, you take 2/3rds cups butter, 2 cups brown sugar and melt them together. Then add 2 eggs, 2 cups flour, 1/4 baking soda, 1 tsp baking powder, & 2 tsps of vanilla.

Pour into a greased 9X13 casserole pan and sprinkle with 1 cup choc. chips and chopped nuts. Then bake at 350 for 25-30 minutes.

We'll see how they are!
